Cooking classes

La Tavola della Signoria offers a variety of cooking classes, based on Emilia Romagna gastronomic tradition, in a inimitable setting: the ancient kitchens of Palazzo Albergati in Zola Predosa (Bologna). Lessons are suitable for anyone willing to improve their culinary skills, and encompass several themes:

HOW TO MAKE BREAD To learn how to knead and bake different types of traditional Italian bread: from walnut bread to whole wheat loafs, and from rosetta rolls to rosemary-flavoured grissini.

To discover the tricks of the trade of the celebrated Emilian “sfogline”. Students will learn techniques and methods required to prepare Italy’s favourite dish: pasta fresca.

An elementary insight on the most artistic side of kitchen. The course teaches basic skills necessary to create natural decorations and centrepieces with small knives and specific carving equipment.

On request, it is possible to organize several courses focusing on classic seasonal desserts such as “Carnival Sweets”, “Easter Colomba” or “Traditional Panettone”.

A minimum of 8 participants is required for each class. Time frame, basic conditions and general structure of each course can be arranged directly with the management to suit the students’ needs.
